Someone in Australia already solved the technical core of a problem a lot of places are quietly carrying. The rest is routing. This page is the handoff, in three registers.
In 2016, Olympia Yarger founded Goterra in Canberra. Black soldier fly larvae in modular shipping-container units, chewing through food waste at municipal scale and leaving behind clean protein, frass, and separable packaging. By 2024, City of Sydney had a 22,500-household trial underway. Wetherill Park opened a $3.5M dedicated facility built to process 6,000 tonnes a year. Woolworths has been running trials in the Goterra system since 2020.
It works. The engineering is settled. Which means the technical conversation is over, and what remains is who recognizes the pattern in their own back-of-house and who's positioned to carry it.
